This exquisite caviar comes from the Amur River between China and Russia and is produced from the offspring of Huso dauricus & Acipenser schrenckii sturgeon. Banned from export and harvest to protect wild stocks, the Schrenkii Sturgeon was among many species restocked in the 1990s to be aquacultured for its meat, then soon after for its roe.
The Imperial Gold Reserve is hand selected by our Caviar Director to ensure its color, texture & taste is perfect. This is the elite offering for the Imperial selection.
Under the direction of Iranian Master Caviar Specialists, these fish are meticulously harvested using some of the most advanced aquaculture methods available today. This large river sturgeon mature in 7-10 years and produces caviar which is light brown to light grey in color, has a crisp firm texture, and a full-bodied flavor with a hint of almond nuttiness on the palate.
