Fried Shrimp Po’ Boys

In honor of Fat Tuesday, we fried up some shrimp and whipped up a homemade remoulade. You can also make this classic sandwich with crawfish or oysters.

INGREDIENTS

Yield: 4 servings

  • For the Fried Shrimp:
  • 1 pound cleaned shrimp - Gulf, PD, or Crawfish
  • 2 eggs
  • 2 tbsp buttermilk
  • 1/2 cup all purpose flour
  • 1 tsp paprika
  • 1 tsp seasoning salt
  • 1/2 cup corn meal
  • Canola oil for frying
  • For the Seasoned Mayonnaise:
  • 1/2 cup mayo
  • 1 tsp Dijon mustard
  • 1 tbsp capers, chopped
  • 1/2 tsp black pepper
  • 1 tsp kosher salt
  • 1 tbs lemon juice
  • For Assembly:
  • 3-4 loaves French bread
  • Sliced tomato
  • Romaine lettuce
  • Pickled red onion

PREPARATION

Step 1

Prepare a fryer with canola oil and heat to 375 degrees F.

Step 2

Combine flour, cornmeal, paprika and seasoning salt.

Step 3

In a separate bowl, whisk eggs and buttermilk together for the egg wash.

Step 4

Place shrimp in egg wash then toss in flour-cornmeal mix. Fry for a few minutes, until golden brown and delicious.

Step 5

Remove from oil and drain on paper towels or a rack, season with kosher salt.

Step 6

Toast buns and garnish with sliced tomato, romaine lettuce, seasoned mayonnaise, and pickled red onion.

Step 7

Top with fried shrimp and enjoy.
