Not actually a Snapper, these pink and silver scaled Sea Breams are caught on long-lines between New Zealand and Japan. They so resemble the American Red Snapper in color and form that is easy to understand how it came by its name. It has a firm, flaky, mild flavored flesh that can be seared, broiled or grilled, and the skin, when cooked, is edible. The Tai is a suitable substitute for most dishes that call for Red Snapper.
