Found in Europe, the Daurade is a Silver Bream commonly know as the “gilt-nose” for the yellow band across its face. This small fish is a favorite in the kitchen because of the thin layer of flavorful fat under its skin that keeps it moist, rich and sweet when cooked. Ideal for the grill, it is also excellent stuffed and baked whole, poached in wine, filleted and sauteed, or braised in stews. A true seafood classic in the kitchen.
