  • Taste: Creamy, butter
  • Size of Pearls: Medium to large
  • Texture: Medium firm to delicate
  • Species: Acipenser Transmontanus

Raised and harvested in aqua farms located in California. The native Californian White Sturgeon (Transmontanus) yields beautiful roe much like the finest Osetra.

Fed on a natural diet in ponds of filtered artesian well water, this is truly sustainable caviar. The result of this controlled process is caviar of consistent quality and freshness, with medium-sized, rich brown-black eggs exhibiting a creamy yet clean flavor.
