Produced in our on-premises smokehouse, our line of smoked shellfish complements our renowned smoked salmon and are a long-time favorite of our customers. Using only all-natural brine ingredients such as lemon juice, soy sauce, cane sugar, and seaweed, we let the “smoke do the work” to finish the flavor.
We start with the freshest tiny shrimp, rope-grown mussels, and sweet local sea scallops. To bring out the true flavor of the sea, the shrimp and mussels are gently cold smoked over fruitwoods. Our sea scallops are hot smoked – essentially cooked through – and a have sweet, smoky finish. All are wonderful as special appetizers, over salads or pasta, or stand alone as a unique snack. These sweet, native pink shrimp are fresh harvested from the cool waters off the Maine coast, cured with a blend of seven herbs and natural flavorings, and then cold smoked with hickory. Product ships frozen.
We start with the finest, most tender sea scallops and brine them with a delicate mixture of lemon juice and all natural soy sauce. Then we hot smoke them with cherry wood to achieve a golden brown color and a mild, sweet taste. Product ships frozen.
