All of our smoked salmon is smoked here in the heart of Portland's Old Port fishing community. It is here that we have taken this age-old preservation method and turned it into an art form. No preservatives, chemicals or dyes are used in our curing process. Our cold-smoked varieties include our Scotch Cured Smoked Scottish Salmon, Daniel Boulud Smoked Scottish Atlantic Salmon, Citrus & Basil Smoked Atlantic Salmon, Maine Spiced Salmon and our Smoked Salmon with Dill. Our hot smoked product is the Maple Hot Smoked Atlantic Salmon.

Smoked Scottish Salmon

Chef Daniel Boulud Smoked Scottish Salmon - Developed exclusively for Chef Daniel, this superb smoked Scottish salmon is now available to all seafood connoisseurs. Our four-day smoking process starts with farm-raised Scottish salmon. The fish is cured with a brine of imported French sea salt, seaweed, and unrefined cane sugar. It is then slowly cold-smoked over fruit wood. The result is a smooth buttery texture with a wonderful flavor that The New York Times describes as a "…lightly smoked, silky salmon with a gently sweet, fresh taste - more salmon than smoke."

Citrus Basil Smoked Salmon

Citrus & Basil Smoked Atlantic Salmon - Our own unique blend of lemon, lime and orange zest oils with vodka, fresh basil, natural sea salt and blended hard and fruitwood smoke.

Maine Sea Spice Salmon - Our recipe includes adding a mixture of paprika, pepper, garlic, thyme and other herbs to the brine cure. The fillets are then cold smoked, resulting in a peppery, complex herbal finish.

Smoked Salmon with Dill- We add fresh dill to our brine mixture which contains organic sugar, Mediterranean sea salts and a touch of lemon for this wonderful, cold smoked salmon.

Hot Smoked Salmon

Maple Hot Smoked Atlantic Salmon - Hot smoke processing produces a flaky, more firm-textured salmon with a sweet glaze of pure Maine maple syrup.
This slightly sweet delicacy will win over even those who haven't enjoyed smoked salmon. It is excellent in salads with fresh fruit and nuts.

Salmon Jerky - Cold smoked salmon bathed in beer brine and blended with spices, natural soy sauce, lemon juice, honey, milled cane sugar and salt. A delicious and nutritious snack.
