Siberian Sturgeon Caviar - Acipenser Baerii

Siiberian Sturgeon CaviarSiberian Sturgeon (Acipenser Baerii) is a sturgeon species native to Russian rivers, and is considered one of the most adaptable Sturgeons to a farmed environment. Siberian Sturgeons produce small-to-medium sized black pearls with a crisp, clean favor that are often compared to the finest wild sevruga caviars. These malassol (low salt) caviars are characterized by a dark charcoal grey color with an attractive, almost mirror-like sheen. The flavors are rich, nutty, and creamy. American White SturgeonAcipenser Transmontanus

While some caviar purveyors often mislabel their roe as being “Osetra”, the White Sturgeon is in fact a fish native to rivers in the western United States. Raised and harvested in aqua farms in California, the White Sturgeon yields beautiful roe much like the finest Osetra. Fed on a natural diet in ponds of filtered artesian well water, this is a caviar of consistent quality and freshness, with medium sized, rich brown-black eggs exhibiting a creamy, yet clean, flavor and finish. Spoonbill (Paddlefish Roe)

The spoonbill is a wild freshwater Paddlefish that thrives in the waters of the Mississippi and Tennessee rivers. Prized for it’s elegant flavor at a manageable price, this caviar exhibits many of the characteristics of its Caspian cousins: consistent sizing of the eggs, a steely-gray sheen and a rich, creamy flavor. Golden Whitefish Roe

Taken from the cold water lakes of Michigan, the Whitefish produces a renowned roe often called “Golden Caviar”. A favorite for its dramatic color and firm “popping” texture, this petite, yellow-gold roe has a mild, pleasing flavor. Buy Now

 

Salmon Roe

Our finest Alaskan chum salmon roe has a very large egg approximately the size of a pearl, with a vibrant golden orange color. It is low in salt, with a firm texture.
