Castello di Ama D.O.P. Olive Oil
Four varieties of olives are harvested and estate pressed in Tuscany's
Chianti Classico region to craft Castello di Ama. It is crisp, clean,

Cepa Vieja Aged Sherry Vinegar
The Cepa Vieja is crafted from Soleras that have been kept for more than
25 years in American oak barrells that are full flavored from use in the
sherry wine aging room, sourced from a 40 year old mother vinegar. This
is a beautiful ?daily use? vinegar that will enhance any recipe that
calls for sherry vinegar. It is rich and sweet with nice floral tones,

This balsamic "jelly" consists of the Saporoso Malpighi Balsamico,
sugar, and natural fruit pectin. Saporina is a perfect compliment to

This wonderful oil is produced by the Toledo family using a blend of
Arbequina, Picual, Hojiblanca and Morisca olives grown at the "Perales
de Miraflores" estate near Merida. The soil in which the varieties are
cultivated has more than two thousand years of tradition in olive and
wine groves. Marques de Valdueza is clean and fruity, with hints of

Ourogal is created in the town of Abrantes in the region of Ribatejo by
the Sarnadas family using Galega olives. It is fruity, with notes of
apples, walnuts, green olives, and custard. It finishes with floral

pan seared sea scallops, soft-shell crabs, drizzling on spaetzle,

Rozendal Farms Natural Red Wine Vinegar
Rozendal is produced on a family-owned vineyard in Stellenbosch,South
Africa. The wines destined for this vinegar are aged in barrels for two
years and thereafter are combined with grape must macerated with green
tea, chilli, carob and lavender. It is then matured for not less than 10
years in small Oak barrels. The result is a very interesting and
delectable concoction. It reminded me of a Spanish garanacha vinegar
with notes of licorice, cocoa, sherry, and sweet cinnamon accentuated by

The production of olive oil at Trevi follows techniques not much
different from those used by the Etruscan people 2,500 years ago. The
