In September of 2010, Browne Trading Co. introduced responsibly harvested wild swordfish caught and exclusively selected for us by Linda Greenlaw while captaining the Fishing Vessel Hannah Boden. Due to the success of last year's venture, Browne Trading, through Great Oceans, is now offering LINDA GREENLAW SELECT® Swordfish. These fish are rated as "Top of the Trip®" - the best of the catch. The "Top of the Trip®" is the freshest of what is produced by each individual boat. Captain Greenlaw works exclusively with Great Oceans, a national leader in importing fresh, wild, line-caught swordfish. Great Oceans buys the production of the largest and best longline fleet owners in the world. Their combined expertise ensures that the quality of each and every swordfish that is sold to Browne Trading's customers earn a grade to be sold as LINDA GREENLAW SELECT®.

The swordfish resembles other large billfish such as the marlin and sailfish, as all are noted for sword-like beaks and large dorsal fins. The sword is an appropriate name for the nose, as these fish use their "weapons" to slash at prey. They have been known to attack much larger fish and even boats with reckless abandon. The sword itself is usually about a third of the entire length of the fish, which often measure 6 to 15 feet. The fish weigh between 90 and 500 pounds, but have tipped the scales at 1,400 pounds. The best time to catch swords is by moonlight, when they feed on squid, herring, mackerel and other smaller fish. Most trips are set to land fish around the full moon – the height of their feeding cycle. Steaks of this firm white flesh are nutritious and unforgettable when fresh off the grill or pan seared. Swordfish is easy to prepare, but should be cooked quickly to retain moisture.

Fishing for swordfish is not without its challenges. This particular fishery is most productive during certain phases of the moon; necessitating that trips are in sync with the lunar cycle. LINDA GREENLAW SELECT®swordfish are harvested using a hook and line method. Swordfish are caught one at a time. When a fish is pulled from the ocean, it is immediately and immaculately cleaned, chilled, and then stored in salt water ice in the fish hold.

Because the grading of seafood is part subjective and part science, it takes years of experience to perfect. Fish grading is a very complicated and detailed process in which Great Oceans excels. Great Oceans thoroughly grades each fish twice (once at the dock and again before shipping) to ensure LINDA GREENLAW SELECT® premium quality standards. It is finally graded by Rod Mitchell at Browne Trading upon arrival to our facility to make sure the fish meet our exacting quality specifications as well.

All fish are cut to order by Browne Trading on premises, fresh as loin cuts, which are the highest quality boneless cut taken from the backbone lengthwise, by the pound. Linda Greenlaw is America's only female swordfishing captain and author of three New York Times bestselling books about life as a commercial fisherman.
