Gold Asetra is featured in many dishes at Restaurant Daniel and remains Daniel's "personal favorite at home with my friends". This exceptional caviar has a warm golden color with grains similar to beluga in size. Gold asetra offers a sweet, nutty flavor with champagne overtones. Very limited availability.

My recipe begins with Scottish salmon of world-renowned label rouge quality. It is lightly smoked in a natural cure enriched with French sea salts. Developed exclusively for Chef Daniel by Browne Trading Company and produced in our Portland, Maine smokehouse, this superb smoked Scottish salmon is now available to all seafood connoisseurs. Our four-day smoking process starts with label rouge Scottish salmon. The fish is cured with a brine of imported French sea salt, seaweed, and unrefined cane sugar. It is then slowly cold-smoked over Maine birch wood. The result is a smooth texture with a wonderful flavor that The New York Times describes as a "…lightly smoked, silky salmon with a gently sweet, fresh taste - more salmon than smoke." Judged by the Wall Street Journal's "Catalog Critic" as the Best Overall in December, 2004.
